CHICKEN CASSEROLE

"In loving memory of my Papa"

I remember being so excited for Thanksgiving to come around so I could get a bite of Papa's Chicken Casserole! He would ask us what we wanted for Thanksgiving Dinner and I'd beg for it. Now that he has passed I hope to one day make the Chicken Casserole just half as good as his was. Thank you Grannie for passing on his awesome recipe!

INGREDIENTS

1 PKGE. PEPPERIDGE FARM DRESSING MIX
1 STICK MARGARINE
1 CAN CREAM OF CHICKEN - MUSHROOM SOUP
1 CAN VEG-ALL
1 LARGE CHICKEN COOKED UNTIL TENDER,BONED AND CHOPPED IN CHUNKS. (MAY USE 4 PCS. CHICKEN BREAST)

DIRECTIONS

MELT MARGARINE AND MIX WITH DRESSING MIX.
IN A 13 X 8 CASSEROLE DISH PUT A LAYER OF DRESSING MIX, LAYER OF CHICKEN.
MIX CREAM OF CHICKEN - MUSHROOM SOUP, ONE CUP CHICKEN BROTH AND CAN OF VEG=ALL.
PUT 1/2 OF THIS ON TOP OF CHICKEN.
REPEAT LAYERS AGAIN.
PUT REMAINING DRESSING MIX ON TOP.
BAKE AT 350 FOR 45 MINUTES.
(FOR MORE FLAVOR JAMES ALWAYS ADDED ONION TO THE POT WHEN HE BOILED THE CHICKEN. IF HE WANTED THE DISH TO MAKE THE DISH BETTER HE WOULD PUT TWO CANS OF CHICKEN SOUP.)
YOU COULD ALSO USE MILK INSTEAD OF THE CHICKEN BROTH.

I have fond memories of the dishes that my Grandparents used to make for holiday dinners. Nothing like a bit of Grandma's or Grandpa's cooking, which was always served with an extra helping of love..

BTW... What is 'Veg-All' ?

Super easy and delicious-sounding. I love it.

Karen--love your NZ heart, and I do! Veg-All is sold in the canned veggies section of the grocery store--it's carrots, peas, potatoes, celery, butter beans (or limas, as Yankees call them), corn and green beans in a broth. Does this help you any???

I love family recipes that are passed down. Such wonderful feelings when you're cookin' your grandparents' meals!!

Not to mention they're usually yummy.

My 2-year-old made me so proud when she played in the sand on the beach this week and pretended to make a casserole. What a good Southern baby! So we will have to try this one out at home!

I love Papa's chicken casserole. Just thinking about it, I can sit here and almost taste it. (I am one of Kristy's cousins and I too loved papa's casserole and other dishes he used to fix) Trust me this is a delicious and simple casserole, my family loves it.

OK, I made this for dinner tonight, and I must say, it was quite tasty! I have quite a bit of it leftover though... how does it reheat? And for future reference, have you ever tried to freeze it?
